One-Bowl Chocolate Cupcakes
3/4 C unsweetened cocoa powder
1 1/2 C flour
1 1/2 C sugar
1 1/2 t baking soda
3/4 t baking powder
3/4 t salt
2 large eggs
3/4 C warm water
3/4 C buttermilk
3 TB vegetable oil
1 t vanilla
Mix dry ingredients first, then add wet. Mix batter until smooth. Bake at 350 for 20 minutes.
Marshmallow Frosting
2 or 3 sticks butter (I did 2 1/2)
2 C sugar
1/2 t vanilla
16 oz marshmallow cream
Cream the butter on high until it is light & fluffy. Add the sugar 1/4 C at a time, and beat until fluffy eat time. Beat in the vanilla until incorporated. The add the marshmallow cream and mix until creamy.
**Be sure and add the sugar 1/4 C at a time & beat until fluffy. I did this, but probably didn't beat it quite long enough between each 1/4 C because the frosting was a slightly grainy. It still tasted good, but next time I would like it to be smooth.
Transfer to a pastry bag & pipe onto cupcakes -- I just used a Ziploc with the corner cut off.
The tops are dusted with graham cracker crumbs and each cupcake has a square of Hershey's chocolate in it -- this was Zack favorite part!

hi Amy! THose cupcakes look delicious! I cant believe Zach is already one! Dont you think its time to have another one?...just kidding! I remember the day Carter turned one it seemed everybody thought it was time for me to get pregnant again! haha. I was enjoying my sleep way to much to let that happen! We need to get together sometime!
