Pulled Pork Tacos

From: Real Simple Magazine

2 - 2.5 pounds boneless pork shoulder
2 t salt
1 t pepper
2 t cumin
1/2 C apricot jam/preserves
2 jalapenos, sliced into rings & seeded (I used canned)
1 red onion roughly chopped

flour tortillas - warmed

Place everything (except the tortillas) in a crockpot for about 4 - 8 hours (depending on how much meat you do). Shred meat & let it absorb the juices a bit (add more jam if it looks dry). Melt cheese on tortillas, spoon in meat, top with sour cream, lettuce, etc & enjoy.

okay YUMMY!!! now I am really hungry!
I am the worst... My mom wanted to start walking in the early morn b/c my kiddo's wake up on tue and thurs.... but I have been walking in the afternoons...i need your number to call you one of these times I go... you know around 3:pm when you have you house all picked up for when your husband comes home and your kids are crazy and need to keep them busy.
